Forced closures and capacity restrictions during the worst of the outbreak drove many eateries out of business. The diners eventually returned but many workers did not, leaving some restaurants struggling serve customers; higher costs added yet another complication.
Frank Brusco is well acquainted with all of those problems. The owner of Gabriella’s Italian Steakhouse in Red Bank and Patricia’s of Holmdel – he’s also a partner in brunch spot Over Easy – dealt with them all.
