A New York City-born bakery café concept developed by the co-founder of gourmet cookie chain Chip City Cookies is setting its sights on New Jersey.
Located at 260 Bellevue Ave. in Montclair, Somedays Bakery’s menu includes premium croissants, soft-serve ice cream and La Colombe coffee.

After Peter Phillips unveiled Somedays Bakery two years ago in Astoria, Queens, the store quickly generated buzz for its dedication to traditional French baking techniques and innovative twists on classic pastries, like a black sesame tahini croissant and a chocolate hazelnut & praline lattice. Its first franchised site opened earlier this year in Long Island City.
In Montclair, the store is owned and operated by local husband-wife team Niko and Anastasia Porfyris.
Following its June 27 grand opening, Somedays Bakery is open Friday through Sunday, 8 a.m. to 4 p.m. Expanded hours will be added soon, according to the chain.
NJ Advance Media noted that Somedays Bakery finds itself in a bakery-rich neighborhood in Montclair. Its next-door neighbor is Mattarello Bakery & Café, while the Little Daisy Bake Shop and Marcel Bakery and Kitchen are just down the road.
Phillips recently told Montclair Local he believes Somedays Bakery will be successful in its new location.
“I know the customers are there, and … we’re going to come to market with an exceptional product,” he said, adding, “I have a lot of confidence that the community is going to rally around us, and I think we’re going to be there for a long time.”

After opening its doors to franchise opportunities this past winter, Phillips said they’re looking for partners who “share our passion for quality, community, and exceptional customer experiences.”

In addition to serving as CEO of Somedays Bakery, Phillips continues to lead Chip City Cookies. After launching that business in 2017 with childhood friend Teddy Galias, they have grown the brand to nearly 50 locations. Within New Jersey, it has outposts in Montclair, Hoboken and Ridgewood.
