Thompson Street acquires Bubbakoo’s Burritos, aims for faster expansion

St. Louis-based firm Thompson Street Capital Partners has acquired Wall Township-founded Bubbakoo’s Burritos.

The parties did not disclose terms of the deal.

Restaurant industry veterans Bill Hart and Paul Altero founded the Mexican fusion chain in 2008. Bubbakoo’s focuses on made-to-order food and a vibrant restaurant experience.

In 2015, the brand began franchising. It has since grown to more than 130 locations across 15 states.

TSCP Managing Partner Bob Dunn said Bubbakoo’s has created an innovative and compelling brand that resonates with a broad and growing customer base.

“Bill and Paul have built something special – an exciting concept with strong franchisee relationships, consistent unit growth, and a passionate following,” said Dunn in a June 18 press release. “We are thrilled to partner with the team as they enter this next phase of expansion.”

From NJ to nationwide

Hart reflected on the journey growing the business to this point.

Additionally, Altero noted TSCP’s deep experience in scaling founder-led businesses. He said the firm “shares our passion for supporting franchisees and delivering great experiences to customers.”
